Instructions
Bring the water and salt to boil over high heat.
Meanwhile, beat the powdered sugar, cream cheese, and milk together until smooth then transfer to the fridge.
Add rolled oats to boiling water and stir. Reduce heat to medium-low
Cook for 6-10 minutes, stirring occasionally, until the oats have absorbed the water and softened.
Mix in the vanilla, brown sugar, and cinnamon.
Portion oatmeal into bowls and drizzle the cream cheese icing over the top. Add additional toppings if desired.
Notes
*Technically, 1/2 cup of dry, rolled oats is one serving. That is rarely enough to feel like a full breakfast for adults in our house. This makes 4 hearty adult portions or 6 portions for smaller appetites.*To scale up this recipe please follow this ratio: Add 3/4 cups of water for every additional 1/2 cup of oats. If you like a looser oatmeal, increase the water by 1/4 cup.*If your oatmeal is cooking slower than expected, increase the heat of your burner to medium.
