A 30-minute pasta dinner recipe using fresh summer bell peppers, link sausage, onion, pasta, and olive oil to create a wholesome, family-friendly meal.
12ounceslink-style sausageWe like chicken sausage, and use about 4 links.

1cupyellow onion, dicedabout 1/2 an onion
1.5tablespoonsminced garlic3 cloves
1pounddried pasta1 package
2 tablespoonssalt
5tablespoonsolive oil
Instructions
Add all but 1/2 teaspoon of salt to a large pot of water and bring it to a boil over high heat. Add past to cook when boiling.
Heat a large high-sided skillet over medium-high heat. Slice each sausage in half, then cut each half into bite-sized pieces.
Add 2 tablespoons of oil and the sausage to the hot skillet. Let the sausage brown for 3-5 minutes, stirring occasionally.
Peel and seed your peppers, then dice them. Dice the onion and finely mince your garlic.
Add it to the sausage with 1 additional tablespoon of oil if the pan is dry. Sauté for 5-8 minutes, or until the peppers are tender.
Reserve 1 cup of pasta water, drain the pasta and add it to the peppers and sausage.
Pour 1/2 cup of pasta water and 2 additional tablespoons of oil into the pan and stir over medium-high heat. Stir and toss until the water and oil had reduced into a sauce. Add more water in splashes if the pasta appears dry.
Taste, add reserved salt in small pinches if needed, then serve.
Notes
-Use any kind of link style sausage you like. Most dinner type sausage compliment peppers. The sausage will determine the final flavor, so choose one your family likes.-Swap 1 jar of drained and chopped roasted red peppers by adding it in just 2 minutes before the pasta.-Peeling peppers reduces bitterness and makes them extra tender when cooked. Use a potato peeler to take as much as you can off.
